- Begin by peeling and cutting Yukon Gold potatoes into even, 1-inch chunks.
- Place the prepared Yukon Gold potatoes in a large pot and cover them with cold water. Add a generous pinch of salt, then bring to a boil.
- Once cooked, drain the potatoes and return them to the hot pot. Cover to let them steam for about 5 minutes.
- Mash the steamed potatoes, then gradually mix in butter, milk, sour cream, and Boursin cheese until smooth.
