- Preheat your oven to 400ºF (200ºC). Prepare your baking dish.
- Flatten the chicken breasts slightly and season with salt, pepper, and half the garlic.
- In a mixing bowl, combine spinach, cream cheese, heavy cream, remaining garlic, onion powder, chili powder, black pepper, and Italian seasoning. Fold in parmesan and half of mozzarella.
- Spread the creamy mixture over the chicken, add sun-dried tomatoes, drizzle with oil, and top with remaining mozzarella.
- Cover with foil and bake for 20 minutes, then uncover and bake for an additional 15 minutes.
- Let it rest for 5-10 minutes before serving, garnished with parsley.
