Step-by-Step Instructions
  1. Heat the Oil: In a large skillet, heat 1 tablespoon of vegetable or coconut oil over medium heat until shimmering.
  2. Cook the Chicken: Season 1 pound of diced boneless, skinless chicken breasts with salt and pepper. Cook for 5-7 minutes until golden brown and internal temperature reaches 165°F.
  3. Add Aromatics: Add 2 minced garlic cloves and 1 teaspoon of grated ginger to the skillet and stir for about 1 minute until fragrant.
  4. Make the Sauce: Pour in 1 can of coconut milk, 1 tablespoon of soy sauce, and the juice of 1 teaspoon lime. Simmer for 5-7 minutes.
  5. Prepare the Rice: Cook 2 cups of rice according to package instructions in a separate pot.
