  • 8 ounces bow tie pasta short pasta like rotini can be substituted
  • 1.5 cups corn kernels fresh corn preferred
  • 1.5 cups cherry tomatoes halved
  • 0.5 small red onion finely chopped
  • 2 Tbsp cilantro finely chopped, use both leaves and stems
  • 1-2 avocado diced, add right before serving
  • cotija cheese optional
For the Dressing
  • 0.5 cup plain Greek yogurt sour cream is a substitute
  • 0.25 cup fresh lime juice
  • 2 cloves garlic whole cloves for blending
  • 0.5 tsp salt to enhance flavors
  • 1/8 tsp cayenne pepper omit for milder dressing

Method
 

Step-by-Step Instructions
  1. In a food processor, blend together Greek yogurt, lime juice, cilantro, garlic, salt, and cayenne pepper until smooth. Refrigerate.
  2. Bring a large pot of salted water to a boil and cook bow tie pasta according to package instructions until al dente. Drain and cool.
  3. Boil corn kernels for 1.5 to 2 minutes until tender, drain, and cool. Prepare tomatoes, onion, and cilantro.
  4. In a bowl, combine pasta, corn, tomatoes, onion, and cilantro. Drizzle dressing over and toss gently.
  5. Just before serving, fold in diced avocados and optional cotija cheese. Serve immediately or refrigerate for up to 2-3 days.
