Step-By-Step Instructions
  1. Prepare the chicken filling by shredding cooked chicken and mixing with optional black beans or bell peppers. Season with chili powder, salt, and pepper.
  2. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish. Pour a layer of enchilada sauce at the bottom.
  3. Lay out the tortillas, spoon filling along the center, roll them tightly, and place seam-side down in the dish.
  4. Pour remaining enchilada sauce over the rolled tortillas and sprinkle cheese on top.
  5. Bake for 20-25 minutes until cheese is bubbly and golden. Optionally broil for 1-2 minutes for a crispy top.
