  • 1 cup Sweet Corn frozen corn can be used
  • 1 can Diced Tomatoes and Green Chiles fire-roasted adds extra flavor
  • 2 cups Ready Rice or freshly cooked rice
  • 2 cups Colby Jack Cheese freshly shredded melts better
Optional Garnishes
  • 1 cup Fresh Cilantro for garnish
  • 1 medium Sliced Avocado for garnish
  • 1/2 cup Sour Cream or Greek yogurt as a lighter option
  • 1 cup Crushed Tortilla Chips for added crunch

Step-by-Step Instructions
  1. Heat the Skillet: Begin by heating a large oven-safe skillet over medium heat for about 2 minutes. Once it's warm, spray the bottom with cooking oil to prevent sticking.
  2. Cook the Meat and Onion: Add the lean ground beef and diced onion to the skillet, cooking for 8-10 minutes until the beef is browned and the onion is translucent.
  3. Add Seasoning and Salsa: Stir in the taco seasoning and salsa, mixing everything together well. Let this to cook for about 2-3 minutes.
  4. Incorporate Beans and Corn: Next, add the black beans, undrained corn, and diced tomatoes with green chiles to the skillet. Let the mixture simmer for 5-6 minutes.
  5. Mix in the Rice: Add the ready rice to the skillet, stirring thoroughly to combine all the ingredients. Cook for an additional 2 minutes.
  6. Top with Cheese: Sprinkle the shredded Colby Jack cheese evenly over the top of the rice mixture. Cover the skillet and allow it to heat for another 2-3 minutes.
  7. Broil for Golden Finish: Broil the skillet for about 1-2 minutes if you want a golden-brown crust on top. Watch closely.
  8. Garnish and Serve: Remove the skillet from the oven carefully, and garnish with fresh cilantro. Serve with optional toppings.
