- Lay low-carb tortillas flat, spoon marinara sauce on each, leaving a half-inch border.
- Sprinkle mozzarella cheese evenly over the sauce.
- Arrange 20 slices of pepperoni evenly on top of the cheese.
- Tightly roll each tortilla from one end to enclose the filling.
- Brush the outside of each rolled tortilla with olive oil.
