Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Lay low-carb tortillas flat, spoon marinara sauce on each, leaving a half-inch border.
  3. Sprinkle mozzarella cheese evenly over the sauce.
  4. Arrange 20 slices of pepperoni evenly on top of the cheese.
  5. Tightly roll each tortilla from one end to enclose the filling.
  6. Brush the outside of each rolled tortilla with olive oil.
  7. Place the rolled tortillas seam-side down on a parchment-lined baking sheet and bake for 10–12 minutes.
  8. Allow to cool for a few minutes, then slice into bite-sized pieces.
