Ingredients
  

For the Salad
  • 1 large Cucumber thinly sliced
  • 8 ounces Imitation Crab Meat or fresh crab
  • 2 medium Avocado ripe
  • 2 stalks Green Onions use both white and green parts
For the Dressing
  • 3 tablespoons Rice Vinegar
  • 2 tablespoons Soy Sauce gluten-free if needed
  • 1 tablespoon Sesame Oil
  • 1 teaspoon Sugar adjust to taste
  • to taste Salt
  • to taste Pepper
For Garnish
  • 1 tablespoon Sesame Seeds for topping

Method
 

Preparation
  1. Wash the cucumber thoroughly and slice into thin rounds, about 1/8 inch thick.
  2. Dice the ripe avocado and add it to the bowl with cucumber.
  3. Finely chop the green onions and add them to the bowl.
  4. Gently toss together cucumbers, avocado, and green onions.
  5. In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, salt, and pepper.
  6. Pour the dressing over the salad mixture and toss gently.
  7. Cover and chill in the fridge for at least 15 minutes.
  8. Before serving, sprinkle sesame seeds on top.
