Preparation
- Wash the cucumber thoroughly and slice into thin rounds, about 1/8 inch thick.
- Dice the ripe avocado and add it to the bowl with cucumber.
- Finely chop the green onions and add them to the bowl.
- Gently toss together cucumbers, avocado, and green onions.
- In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, salt, and pepper.
- Pour the dressing over the salad mixture and toss gently.
- Cover and chill in the fridge for at least 15 minutes.
- Before serving, sprinkle sesame seeds on top.
