- In a medium bowl or large jar, combine rolled oats, almond milk, vanilla Greek yogurt, chia seeds, maple syrup, vanilla extract, and ripe mashed banana. Stir thoroughly until well mixed.
- Seal the jar or cover the bowl with plastic wrap and place it in the refrigerator. Allow to chill for at least 4–6 hours, ideally overnight.
- Remove the jar from the refrigerator, stir the mixture, and adjust consistency with more almond milk if desired.
- Layer the oats with crushed graham crackers, fresh banana slices, and whipped topping if using.
- Serve immediately or store leftovers in the refrigerator for up to five days.
