Cookie Preparation Steps
  1. In a mixing bowl, cream together unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
  2. Add the egg, salt, and almond extract, mixing until smooth.
  3. Gradually incorporate the all-purpose flour, mixing gently until just combined.
  4. Wrap the dough in plastic wrap, shape into a disk, and refrigerate for 30 minutes.
  5. Preheat oven to 350°F (175°C). Roll the chilled dough into 1-inch balls and coat in granulated sugar.
  6. Make a deep indent in each ball with your thumb to create space for the lemon curd.
  7. Fill each indent with about a teaspoon of lemon curd, ensuring it doesn't overflow.
  8. Place cookies on a parchment-lined baking sheet and bake for 10-12 minutes.
  9. Remove from oven and cool on the baking sheet for 5 minutes, then transfer to a wire rack.
